Cardamom Food Fragrance is a food-grade aroma oil from dried Elettaria cardamomum seed, diluted in fractionated coconut oil (MCT) and supplied in a 10 mL amber glass bottle with a fine-mist spray head. The odour is warm, sweet-spicy and camphoraceous with a fresh eucalyptol top.
Functional Properties
The character rests on the balance between α-terpinyl acetate, which gives the sweet-spicy fruity body, and 1,8-cineole, which supplies the fresh camphoraceous lift. α-Terpinyl acetate is specified at 30–50 % and 1,8-cineole at 25–45 %, with limonene at 2.0–8.0 % and sabinene at 2.0–6.0 % rounding the top.
Quality
By GC-FID area normalisation the specified constituents total at least 90 %, and identified compounds at least 95 %. Heavy metals are below the detection limit and the microbiological panel complies. A clear, mobile liquid ranging from colourless to pale yellow, soluble in ethanol and fixed oils; shelf life 24 months.
