About

Water-Dispersible Bergamot Food Fragrance is cold-pressed peel oil of fresh Citrus bergamia fruit, emulsified in a lecithin and water base. The milky-white to pale-yellow oil-in-water emulsion brings the signature top note of Earl Grey straight into iced teas, soft drinks and syrups with no pre-solubilisation step.

Functional Properties

The odour is fresh citrus and sweet-floral over a balsamic base. Bergamot is the rare citrus that carries floral persistence as well as lift. Limonene above 40.0 % opens the profile, linalyl acetate above 15.0 % and linalool above 7.5 % supply the sweet-floral heart, and β-pinene above 5.0 % with γ-terpinene above 3.0 % keep the edges green.

Quality

By GC-FID area normalisation the specified constituents of the essential-oil fraction total above 85.0 % and identified compounds reach a minimum of 95 %. Arsenic, cadmium, lead and mercury are not detected; microbiology complies. Disperses in water and mixes with ethanol; shelf life 12 months unopened at 2–8 °C — shake well before use. Expressed bergamot naturally contains furocoumarins: for leave-on skin products observe the applicable dermal limit or specify a bergapten-reduced (FCF) grade.

Applications

  • Tea drinks: iced and ready-to-drink teas
  • Beverages: soft drinks and bitter aperitifs
  • Syrups and desserts: syrups and citrus desserts

For oil-based applications the same cold-pressed bergamot oil is supplied in an MCT carrier: Bergamot Food Fragrance (in MCT oil).
