- Dosage and use: Juniper berry is the defining botanical of gin and is used in bitters, vermouth and spirit bases, in savoury marinades and game seasoning, and in fresh-woody fragrance accords. The monoterpene fraction — chiefly α-pinene and myrcene — carries the characteristic resinous lift. Use sparingly in flavour applications, where levels well below 0.05 % are typical. Not recommended for use during pregnancy.
