About
Medium-roast Turkish oak supercritical CO₂ extract (Quercus cerris) reproduces the balanced toasted-oak, vanilla, smoky-sweet profile characteristic of barrel-aged wines and whiskies. This dark-amber, viscous oleoresin presents a harmonious phenolic aldehyde composition ideal for accelerated maturation applications.
Functional Properties
The balanced profile features 5-hydroxymethylfurfural (5.49%) contributing caramelized sweetness, trans-coniferaldehyde (4.73%) providing woody depth, sinapic aldehyde (3.38%) adding complexity, syringaldehyde (1.41%), and vanillin (0.70%) for classic barrel notes. Total phenolic content reaches 190.0 mg GAE/g with strong antioxidant capacity (DPPH IC₅₀: 70.7 ppm). The sterol fraction (γ-sitosterol 5.52%) and triterpenes (friedelan-3-one, lupeol) enhance mouthfeel.
Quality
Supercritical extraction from Turkish oak heartwood following controlled medium-roast toasting. Balanced phenolic profile verified by HPLC-DAD. Complies with food-grade specifications.
Applications
- Spirits: Whisky barrel-maturation substitute, accelerated aroma development
- Wine: Oak-aging alternative, wine finishing applications
- Confectionery: Vanilla-oak flavor systems, premium chocolate notes
Typical dosage: 1–5 g/L in beverages, 1–10 g/kg in confectionery. Pre-dissolve in ≥40% ethanol.
