Star Anise Food Fragrance (water-dispersible)

Water-Dispersible Star Anise Food Fragrance is star anise essential oil from the dried fruit of Illicium verum, emulsified in a lecithin and water base. The milky-white to pale-yellow oil-in-water emulsion goes straight into syrups, spiced beverage bases and dairy drinks with no pre-solubilisation step.

Functional Properties

The odour is sweet, warm and intensely anisic, with a liquorice-like body. Anethole dominates the essential-oil fraction at a minimum of 80 % and carries almost all of the odour, so very small additions are already effective. Limonene (max. 5.0 %) and linalool (max. 3.0 %) round the top note without lifting it out of the anisic register. Estragole occurs naturally and is limited to a maximum of 6.0 %; observe the estragole limits applicable to your product category and market.

Quality

By GC-FID area normalisation the specified constituents of the essential-oil fraction total at least 90 % and identified compounds at least 95 %. Arsenic, cadmium, lead and mercury are below detection limits, and the microbiological panel complies with the specification. Disperses in water and mixes with ethanol; shelf life 12 months unopened at 2–8 °C — shake well before use.
