Functional Properties

Sinapic aldehyde dominates at 15.20%, followed by trans-coniferaldehyde (8.00%), syringaldehyde (6.97%), and vanillin (2.55%)—creating the deep charcoal-vanilla, phenolic intensity characteristic of heavily toasted barrels. 5-Hydroxymethylfurfural (1.71%) contributes caramelized, Maillard-derived notes. Total phenolic content reaches 220.4 mg GAE/g with exceptional antioxidant capacity (DPPH IC₅₀: 58.2 ppm). Triterpenes including friedelan-3-one and betulin derivatives add structural complexity.
